Yes, but not for all tools, you should try each one to determine where you can process multiple images at once

It's only available in market (play store) version, and can be invoked from bottom menu of background removing

Will any video tools be added?

No, but can be added in new separate app, for example, VideoToolbox

How can I verify my download of ImageToolbox is legitimate?

ImageToolbox's signing certificate hash can be verified by using apksigner with the --print-certs option. Certificate hashes are published here, and in Readme

You should check the certificate hash from a different source than you got the app from. For example, if you download ImageToolbox, you should verify the certificate hash from here to distrust the server. (Note that PlayStore and F-Droid are signing apks by own unique certificates)
